Dear Aglaia & Costas, I have spent many happy hours cooking Aglaia’s recipes but this is the one that causes me to report. This recipe rewards one on several levels: ease of performing; interesting ingredients; aesthetic delight; delicious and varied tastes; parchment paper! Sarah and I spent a week or so with you several years ago; Sarah is now in an assisted-living facility, so I cook only for myself. Which has its own rewards. I hope all is well with you on your island. I may be back.
