In a mortar beat the salt together with the aniseeds to get a coarse powder. In a large bowl stir together the wheat and barley flours and the aniseed-salt powder. 

Serve with creamy cheeses, such as Manouri, Ricotta Salata, or a sharp Stilton, Gorgonzola or Rockford; great with cured meats, grilled and roasted poultry and game.

Pumpkin, Tangerine and Marmalade BreadA sweet festive treat for the New Year’s breakfast. I came up with the recipe as I have made dozens of jars of marmalade from our very productive Seville Orange tree.

New Year's CakeThis is my mother’s recipe. Serve on its own for breakfast or as a snack with coffee, tea or a glass of orange juice. Decorate with almonds or simply sprinkle with confectioner’s sugar.

BOBOTAMix all ingredients together, except the sesame seeds, stirring with a wooden spoon to make a thick batter like cooked polenta. Add a bit more water if needed.

Wheat, Semolina and Barley Bread with SpicesΧωρίς κοπιαστικό ζύμωμα --αφήνοντας, αν θέλετε, αποβραδίς τη ζύμη στο ψυγείο για να ανέβει-- θα ετοιμάστε μια αυθεντική παλιοκαιρίσια λαγάνα. Αυτό το λαχταριστό ψωμί δεν είναι ανούσιος αφρός, όπως οι τα ‘χωριάτικα’ και οι λαγάνες του εμπορίου, αλλά έχει τραγανή κρούστα και σφιχτή, γευστική ψίχα που μασιέται.

Barley and Honey starterΣε μικρή γαβάθα, ανακακατέψτε ζωηρά τα υλικά, να γίνουν χυλός. Προσέξτε να μη μείνουν σβώλοι. Σκεπάστε χαλαρά με πλαστική μεμβράνη και αφήστε σε θερμοκρασία δωματίου για 48 ώρες.

Smoked Cheese and Kumquat BreadPlace flours, yeast and spices in the bowl of a standing mixer and toss with a spatula. Make a well in the center and pour in the orange juice, the milk and the olive oil.

Lemon OR Seville Orange MarmaladeAdapted from the traditional English recipe. I often add some julienned tangerine, orange and kumquat peels together with the sliced lemon and Seville orange.

Plain, as my mother liked them, or stuffed with nuts, as some people on the islands do, these Christmas cookies are my favorite sweet.
If you manage to resist eating them fast, they will get even better with time…
